Roasted Cauliflower Buddha Bowl


While we've been staying at home, I've been able to get a little head start on incorporating the recipes from my upcoming Spring Detox + Clean Eating Kickstart into my regular meal rotation. The rainbow of colors from this Roasted Cauliflower Buddha Bowl were so vibrant (no filter)! I just had to get some photos, and then I thought this might be a fun, easy recipe to share so you can get a "taste" of what's to come in the program.


This clean, healthy meal is so full of nourishment! The variety of colors speaks to all the various vitamins and nutrients. And, it was very filling...I was not foraging for a snack in the afternoon and didn't eat again until dinner.


If you've been feeling the effects of inflammation in your body, this meal would be one to try. The leafy greens and Turmeric both help to fight inflammation. The Turmeric I use is actually a superfoods blend from YourSuper.com called Mellow Yellow. This blend includes Turmeric, Ashwagandha, ginger, cinnamon, lucuma, and pepper and is super at counteracting inflammation and stress.


When planning to make this recipe, be sure to account for the roasting of the cauliflower upfront...plan for about 10 minutes to get it chopped and coated, then another 30-35 minutes in the oven. While the cauliflower is roasting, you can prep the other ingredients.


This meal also holds up well for leftovers. The cauliflower doesn't get mushy and it's quick and easy to assemble on day 2. I love to make food in batches and have leftovers for a few days (to help minimize my time in the kitchen).

Roasted Cauliflower Buddha Bowl

Serves 2

Ingredients

1 large head cauliflower, chopped into florets 2 heaping tablespoons coconut oil 2 teaspoons turmeric powder (I used YourSuper Mellow Yellow) Sea salt and black pepper, to taste 4 cups mixed greens 1 15-ounce BPA-free can chickpeas, drained and rinsed 1 cup shredded carrots ½ cup sliced radishes

Dressing...I chose Lemon Garlic...that recipe is below

Preheat oven to 400 degrees F. Add cauliflower florets to a large bowl. Coat with coconut oil, turmeric, sea salt, and black pepper. Mix well and layer onto a baking sheet. Bake for 20 minutes, then turn over. Bake for another 10 to 15 minutes until golden brown. Remove from the oven and set aside to cool.

To assemble the bowl, divide the following ingredients into 2 bowls: mixed greens, chickpeas, carrots, and radishes. Top with warm or cold cauliflower and dressing of choice (recipe in Dressings).



The dressing...

When making homemade dressing, you'll want a jar or bottle that you shake the dressing in to get everything mixed together really well. I LOVE the dressing shaker I found from OXO, it has a stopper and pour spout built right in.



Lemon Garlic Dressing

Makes about 1 cup

½ cup extra virgin olive oil 2 large lemons, juiced 1 teaspoon garlic powder Sea salt and black pepper, to taste

Add all the ingredients to a small bowl. Mix well. Store in an airtight container for up to 7 days.
